I've noticed that cutting speeds up when the path is a straight line. This seems to be causing issues with many of my cuts. Is this a setting that can be adjusted?

Your machine is probably not capable of cutting the non straight areas at the programmed speed so it slows down in those areas. You can use cut rules to force a slow down in certain areas, but there isn't a way to slow down a straight path unless you just slow the feedrate in the tool.
