I currently use a Hypertherm controller on our CNC Plasma cutting table is this suitable to transfer the G-Codes from Sheetcam as I notice that on the Internet Mach 3 and 4 are constantly mentioned.

Yes, SheetCam should work with your hypertherm controller. In SheetCam go to Options->machine->post processor and select the Hypertherm post processor that most closely matches your machine.
